About the role
We're hiring a Pastry & Baking Apprentice for our morning pastry program. You'll work alongside our head baker on small-batch production, develop seasonal recipes, and learn the craft of baking in a real production environment.
This is an early-morning role. Expect 5am starts. The reward is a finished pastry case before the doors open and a real apprenticeship under someone who came up through Knoxville's specialty bakery scene.
What you'll do: • Morning prep alongside the head baker (laminated dough, scones, muffins, quick breads) • Help develop and test seasonal recipes • Run smaller production tasks independently after your first month • Maintain mise en place and a clean station throughout service • Keep production logs and yields so we can plan the next week • Help train new prep cooks as the team grows
What we're looking for: • Genuine interest in baking; this is craft work, not a stepping stone to barista • Some baking experience (home baking counts if you can talk through your process) • Reliable on 5am mornings, 4 to 5 days a week • Physical stamina for a kitchen environment • Open to feedback and willing to repeat a recipe ten times to get it right
